They know what the invoices came to, which is a different thing, and they know a food cost percentage for the month, which arrives four weeks after the decisions that caused it.

The gap between those and a real plate cost is yield. A case of produce is not the weight that reaches the plate. It is that weight minus trim, minus peel, minus outer leaves, minus what cooked away. Costing on purchase prices understates the most prepared dishes, which are usually the ones the kitchen is proudest of, and a dish can be sold enthusiastically all year at a loss nobody sees.

Every ingredient is costed at purchase price divided by yield, with the yield used and its source recorded on the line, so it can be challenged and corrected.

Contribution margin in money comes before food cost percentage, always. A low percentage on a cheap dish can contribute less than a high percentage on an expensive one, and a kitchen managed on percentage drifts towards cheap food that does not pay the rent.

When an ingredient moves, it recosts the same day and reports only the dishes that crossed a line, with the options and what each does to the guest. Two hundred slightly changed numbers is not a decision anyone can act on.

It reconciles theoretical against actual. What the food should have cost given what was sold, against what it did. Then it accounts for the gap in order, boring causes first: portioning, staff meals, comps, waste, transfers, receiving, count error, and only then loss. A variance reported as waste without checking portioning sends the kitchen after the wrong thing.

It reads the menu on two axes, popularity against money contribution, because the four positions that result need four opposite actions and a ranked list of best sellers supports none of them.
